Sleep, Allergies and Gluten Free Chocolate Chip Cookies

Also known as bleh. (The cookies. Ok, maybe the other two, too.)


I've been up much earlier than hoped for this lovely?gray Sunday morning. After a long night of little dude crawling in bed and proceeding to pat my face for a couple of hours, I'm beat. And hoping he sleeps. Then bitty baby decided it was time to get up and play. Sigh.

All I wanted was a decent tasting gluten free chocolate chip cookie for breakfast. But that is not to be, either! Oh yes, we are trying out GF to see if that's what has been bothering my 2 year old. Possibly my husband, too. Dairy has largely been removed as apparently that's part of the process initially. Cheese. I miss it. While we started this for our son, my husband has noticed a big improvement in his own health due to the removal of dairy. I'm just surprised he never thought to try it long before!

But anyways, long story short my son has had weird skin for a while, messed up digestive system and all other red flags of an allergic reaction to something. I took him in to the doctor this past week and got him setup with another appoint with a pediatric allergist middle of March. Part of me hopes it is something, and something easy, so I can be proactive and help him feel better. I know part of his tiny emotional struggles has to be that he just doesn't feel well.

I'll try posting some tried and true gluten free recipes over the next few weeks as there definitely are some hit or miss out there. Same goes for products you can purchase. Like this black bean spaghetti stuff- YUM.
