It's Menu Monday!


I've been making my meal plans on Mondays for some time now and will try to remember to post them from time to time. I always enjoy seeing others' meal plans to get ideas, too! This week is especially ambitious and in all honesty, I'm hoping there will be some accountability in actually posting what I'm to be making. *Wink* Why Monday? Why not Saturday? I've found Monday to work better for us as I don't  have the added 'to do' on what should be a relaxing weekend. Not to mention, grocery shopping on Saturday is plain crazy. Monday nights, not so bad!

Monday-
Bagels and bananas
Roast chicken/spinach, rice, pineapple
Leftovers

Tuesday-
Eggs, toast, oranges
Cowboy Hot Pot, applesauce
Beef stew, biscuits, oranges

Wednesday-
Monkey French Toast, oranges/bananas
Soup(freezer meal), apples, bread
Dinner most likely at my Dad's

Thursday-
8 Grain hot cereal with raisins, chopped walnuts and honey
Mushroom Stroganoff, peas, applesauce
Steak, brussel sprouts, apples

Friday-
Leftovers
Frittata(eggs, goat cheese, arugula, tomatoes), oranges
Whole wheat pizzas(mini style) with veggies, applesauce

what is Cowboy hot pot? That sounds like something my family would like.

Good question! It's out of my Vegetarian and vegetable cooking book by Christine Ingram. A new one for us to try this week =) Has onion, bell pepper, sweet potato(or carrots), green beans, baked beans, corn. A little tomato paste, smoked cheese on top then thinly sliced potatoes layered on top of everything. baked in the oven until the potatoes are cooked and golden brown on top! If it turns out tasty I'll do a recipe post later this week =)
