Holiday Open House: Homemade Caramels

My mother was given a recipe for caramels a long time ago and has since adjusted it to her tastes. Caramels are a little finicky. But when done right, are so delicious and unlike bought caramels! These are another oft-requested treat by friends and family when the holidays roll around. Awesome to add to those treat platters.



Homemade Caramels

3 cups sugar
3 cups white karo syrup
1 cup evaporated milk
1/2 cup butter
1/8 teaspoon salt
2 cups cream
1 teaspoon vanilla
chopped nuts(optional)

Mix together in a heavy skillet all ingredients except the cream and vanilla. Cook to 228 degrees, stirring constantly. Add cream slowly. Continue cooking to 242 degrees. Stir caramels throughout the entire process. Remove from heat and add vanilla. Add nuts and pour into buttered cookie sheet. Cool and cut. Wrap in wax paper rolls for gift-giving.
